1. Turn on Combi to steam at 210 degrees cook temp, set to 50% steam and medium fan.

  2. Add frozen or slacked buns to slotted pan. Make sure to keep paper on bottom of buns to prevent sticking to pan.

  3. Once at full steam, add slotted trays of buns into combi oven racks.

  4. Close doors abnd allow to steam cook for 12 minutes if frozen and 6-8 minutes if slacked or until internal temp reaches 165 degrees.

  5. Remove trays and place buns in warmer. Be sure to cover with saran wrap or lid to prevent doguh from drying out.
